Thermostable powdered Alpha-amylase enzyme for hydrolysis of long-chain starch molecules into short-chain dextrins. For use in mashing of grains, potato or any other starch-based substrate prior to saccharification.

Improves starch-to sugar conversion; increases alcohol yield and reduces residual gravity. 

  • ENZYME IS STABLE UP TO 176°F (80°C).
  • OPTIMUM ACTIVITY AT 131-167°F (55-75°C).
